Grilled Peaches And Ice Cream

Ingredients:

Directions:

  1. Slice peaches in half and remove stone then heat a skillet over medium heat.
  2. Add all butter and when it stops bubbling and water is evaporated add sugar and cinnamon.
  3. Heat until sugar forms a slurry then remove from heat and keep warm with lid on.
  4. Set peaches onto sheet pan cut side up and using a pastry brush coat flesh with butter mixture.
  5. Take them to the grill and place cut side down over medium hot fire.
  6. Grill until grill marks appear and peaches begin to soften.
  7. Reheat skillet over medium heat.
  8. When mixture just begins to bubble remove from heat and deglaze pan with schnapps.
  9. When peaches have solid grill marks flip over and grill about 1 minute on round side.
  10. Remove from grill and put four peach halves in bowl and spoon butter mixture over them.
  11. Put two scoops of ice cream into each bowl and sprinkle with pecans.
