Grilled Creole Zucchini Sandwiches

Ingredients:

  • 10 medium zucchini , split lengthwise
  • creole seasoning

Directions:

  1. Place split zucchinin into baking dish, sprinkle with olive oil, roll squash around so as to cover well with oil
  2. Sprinkle generously with creole seasoning.
  3. Grill over hot coals about 7 minutes each side, handle with tongs as fork will break zucchini
  4. Lightly grill split buns if making sandwiches, good served with horesradish mayo and a cold beer.
