  1. In a large bowl, cream together the butter, brown sugar, and white sugar until smooth.
  2. Beat in eggs one at a time, and then stir in vanilla.
  3. In a separate bowl, combine the flour, baking soda, baking powder, spices, and salt; stir into the creamed mixture until just blended. Mix in the quick oats and chocolate chunks.
  4. Preheat the oven to 350 degrees F.
  5. Drop by heaping spoonfuls onto parchment-lined (or lightly greased) baking sheets.
  6. Bake for 8-10 minutes in the preheated oven. Transfer to a wire rack to cool completely.
