Green Pawpaw (papaya) Chutney

Ingredients:

  • 1 large green pawpaw (papaya) (must be firm)
  • pinch of salt
  • pinch of pepper
  • 1 large chili (optional)
  • 2 tbsp lemon juice or vinegar

Directions:

  1. Peel the pawpaw, cut into four pieces, scrape the seeds and clean inside
  2. Wash the pawpaw and grate on a cheese grater
  3. Place the grated pawpaw with the sliced onion in a large bowl
  4. Sprinkle with a table spoon of salt
  5. Allow to stand for about 10 minutes..this is to remove excess water
  6. Now squeeze the pawpaw which would have soften by then
  7. Remove all the water
  8. The put in a colander and rinse under fresh clean water to remove the excess salt
  9. Then squeeze in a tea cloth or kitchen towel to remove the water
  10. Add the garlic and ginger to the pawpaw
  11. Heat the oil in a large skillet and add pawpaw
  12. Stir fry for a few minutes
  13. Cover and reduce heat. allow to warm up for a few minutes
  14. Add the salt, pepper, chili and lemon
  15. Mix well
  16. Remove from heat and enjoy.....
