Ingredients:

  • 1 1/2 cups lime juice
  • 3/4 cup olive oil
  • 2 tsp salt
  • 6 tbsp oregano
  • 2 (1 lb) pork loins
  • 6 sliced garlic cloves

Directions:

  1. 1. Put olive oil, oregano, lime juice, garlic and salt in a large resealable plastic bag. Mix the ingredients by shaking the bag vigorously. Taste marinade for bitterness. If too bitter, add more oil. If it’s not zingy enough, add more lime. The salt and garlic flavors should not be overpowering. Place loins in the sealed bag and turn to coat. Marinate in the refrigerator for 2 to 5 hours.
  2. 2. Preheat BBQ to medium heat.
  3. 3. Oil the grill grate, and dispose of marinade. Grill loins for 20 to 30 minutes, flipping until desired doneness
