Grandma's Cheesy Broccoli & Chicken Casserole

Ingredients:

  • 1 (16 oz) package frozen broccoli
  • 4 cups cooked rice
  • 1 (10 3/4 oz) can cream of mushroom soup
  • 10 3/4 oz milk
  • 1/2 cup onion
  • 1/2 cup green pepper
  • 1/2 cup celery
  • 2 oz flour
  • 1 dash salt

Directions:

  1. Chop onions, green peppers, and celery into small pieces.
  2. Fry chopped vegetables in half of the vegetable oil.
  3. Cube chicken.
  4. Flour and salt the chicken cubes and brown in remaining oil-add more if needed.
  5. Add mushroom soup and milk and stir until mixed.
  6. Butter a large baking dish
  7. Add chicken mixture, cooked rice, broccoli, and remaining vegetables.
  8. Stir, cover, and cook 45min in 350 degree oven.
  9. Uncover, top with Cheese Whiz, return to over for 5 to 10 minutes-until cheese is completely melted.
