Grandma’s Squash Soufflé

Ingredients:

  • 3 -4 medium yellow squash
  • 4 tbsp butter
  • 1 tsp salt
  • 1 tsp pepper

Directions:

  1. Cook squash until tender.
  2. Drain WELL and mash.
  3. Add butter and salt and pepper, feel free to alter amounts to taste.
  4. Mix in one egg yolk.
  5. Beat egg white until stiff. Fold into squash.
  6. Put in buttered casserole dish.
  7. Bake until set at 350 degrees (abt. 20 - 30 minutes).
