Ingredients:

Directions:

  1. Saute bacon and onions in hot oil in a big Dutch oven over med-high heat 5 minutes or until onion is tender.
  2. Add collars, in batches, and cook, stirring occasionally, 5 minutes or until wilted.
  3. Stir in beer; bring to a boil.
  4. Decrease heat to low, and cook, stirring occasionally, 25 minutes or to desired degree of tenderness.
  5. Stir in lemon juice and remaining ingredients.
  6. Adjust seasoning to taste.
