Glazed Raisin Sheet Cake

Ingredients:

  • 1 1/2 cups raisins
  • 1 1/4 cups boiling water
  • 1 1/2 cups sugar
  • 2 large eggs
  • 3 1/2 cups all-purpose flour
  • 2 tsp cinnamon
  • 1 1/2 tsp baking soda
  • 1/2 tsp salt

Directions:

  1. Place raisins in bowl and cover with boiling water and let stand 5 minutes.
  2. Drain, reserving 1 cup liquid.
  3. Mix dry ingredients and add to wet and then add reserved raisin liquid - Stir well to blend completely -
  4. Pour into a greased jelly roll pan.
  5. Bake at 375* for 16-20 minutes.
  6. Cool on wire rack 15 minutes -
  7. Prepare glaze of 1 1/2 cups powdered sugar.
  8. 1 tbls butter, melted and 3-4 tbls milk.mix till of spreading consistency and spread on slightly cooled cake.
  9. Let stand on wire rack till set.
