Lemon Blueberry Bread

Ingredients:

  • 2 cups flour
  • 1/2 tsp baking soda
  • 1/2 tsp salt
  • 1/2 tsp mace
  • 1/2 cup butter
  • 1 cup sugar
  • 1 egg
  • 1 tsp vanilla
  • 1 cup milk

Directions:

  1. Preheat oven to 350°F.
  2. Generously grease a 9x5-inch loaf pan.
  3. In a large mixing bowl, combine flour, baking powder, baking soda, salt and mace.
  4. Whisk to blend throughly.
  5. In the bowl of an electric mixer, combine butter and sugar.
  6. Beat at high speed until light and fluffy.
  7. Beat in egg.
  8. Blend in lemon rind, juice and vanilla.
  9. With mixer at low speed, sprinkle in dry ingredients, alternating with milk.
  10. Beat until well moistened.
  11. Gently stir in blueberries.
  12. Pour into prepared pan and bake for 50 to 60 minutes, covering the loaf with aluminum foil during the last 10 minutes, if necessary to prevent over browning.
  13. When a wooden pick inserted in the center comes out clean, transfer bread to a cooling rack.
  14. Let stand 10 minutes, then turn out.
  15. Cool completely before slicing.
