ADD REMAINING BUTTER, LEMON JUICE, HONEY, GINGER AND NUTMEG TO CARROTS. COOK, UNCOVERED, OVER MEDIUM HEAT 2 TO 3 MINUTES, TOSSING FREQUENTLY TO THOROUGHLY GLAZE CARROTS. SPRINKLE WITH PARSLEY AND SERVE.
