Gamma's Pannekoeken – Baked Apple Pancake

Ingredients:

  • 4 eggs
  • 3/4 cup flour
  • 3/4 cup milk
  • 1/4 cup sugar
  • 1/2 tsp salt
  • 2 tbsp butter
  • 1/4 tsp cinnamon
  • 1/4 cup sugar

Directions:

  1. Heat oven to 400°F.
  2. Beat eggs, flour, milk, sugar and salt in small mixing bowl on medium speed for 1 minute.
  3. Prepare apples and fold into mixture.
  4. Place butter in a 9x13glass pan and put in oven just until melted. Remove pan from oven and pour egg mixture in pan.
  5. Combine sugar and cinnamon and sprinkle over mixture.
  6. Bake uncovered until puffed and golden, about 25-30 minutes.
