Ingredients:

  • 1 1/4 cups all-purpose flour
  • 1/2 tsp salt
  • 3/4 cup butter or 3/4 cup margarine
  • 3/4 cup cocoa
  • 1 cup brown sugar , packed
  • 4 eggs
  • 2 tsp vanilla
  • cooking spray
  • 2 tbsp butter or 2 tbsp margarine
  • 1/4 cup cocoa powder
  • 1/2 tsp vanilla
  • 2 cups icing sugar , sifted
  • 1/4 cup milk

Directions:

  1. Blend together flour, baking powder and salt; set aside.
  2. Melt butter over low heat in a large saucepan. Remove from heat.
  3. Stir in cocoa. Beat in brown sugar, sugar, eggs and vanilla. Stir in dry ingredients and walnuts.
  4. Spray a 9-inch square pan. Spread batter in pan. Bake in a 350F oven for 40 minutes. Do not overbake. Cool completely. Spread Fudgy Icing.
  5. FUDGY ICING: Melt butter over low heat in a medium saucepan. Remove from heat. Stir in cocoa and vanilla. Stir in icing sugar and milk until smooth and of spreading consistency.
  6. TIP: You should always be sure to store your eggs in the body of the refrigerator and not in the door to ensure they are kept at a consistently cooler temperature. Eggs should also be kept in the carton as they absorb the smell and flavor of the other foods around them.
