Fried Peach Pie

Ingredients:

  • 1 tsp salt
  • 1 tsp sugar
  • 1/3 cup cold butter, in bits
  • 1/2 cup shortening
  • 6 -7 tsp ice water
  • 1 (12 oz) package dried peaches
  • 1/2 cup sugar
  • 1/2 tsp cinnamon
  • 1 pinch nutmeg
  • 1/2 lemon , juice of
  • oil

Directions:

  1. Crust:.
  2. Mix flour, salt and sugar. work in butter and shortening with fingers, until dough is like cornmeal.
  3. Stir in the ice water just enough for dough to hold together.
  4. Gather into two balls flatten into discs.
  5. Wrap in plastic and chill 1 hour.
  6. Filling:
  7. Place peaches in saucepan.
  8. Cover with water, bring to boil cook for 15 minutes, until most of water is gone and fruit is softened. with a fork mash with the sugar, spices, and lemon juice.
  9. Simmer until thickened, set aside.
  10. To make pies:.
  11. Heat oil 330 degrees roll one disc of dough to 1/8 inch thick.
  12. Cut into 4-5 inch diameter circles.
  13. Spoon 1 heaping Tbsp of filling into center of each disc.
  14. Fold over into half moon shape. crimp edges to seal.
  15. Fry in hot oil turning as needed.
  16. Drain on paper towels. shake powdered sugar and serve.
