Fragrant Chicken And Potato Bake

Ingredients:

Directions:

  1. Grate potatoes using a coarse grater
  2. If you are using rotisserie chicken, separate meat from the bones and mince the meat in the processor
  3. Heat butter in a skillet over medium heat
  4. Mince or finely chop shallots and saute in butter until nicely browned
  5. In a large mixing bowl, combine potatoes, chicken meat, eggs, cooked shallots, salt, pepper, herbs, and cream
  6. Mix well
  7. Fold out the mix into a square 8 casserole dish
  8. Heat the oven at 375°F
  9. Place the casserole dish in the middle of the oven and cook for about 40 minutes, or until top of the dish is nicely golden-browned
  10. Let stand for a few minutes after baking
  11. Serve hot
