  1. MOST IMPORTANT STEP: saute the first 3 ingredients in the butter and olive oil. when the sweet onion has become translucent, add the sugar and continue to saute until it caramelizes. if it doesn't caramelize, you haven't cooked it long enough and it will not taste nearly as good.
  2. (frozen squash) lightly salt the squash and microwave on high for 5 minutes - for average strength microwave. adjust accordingly. drain, microwave 5 more minutes.
  3. (fresh squash) wash and slice the squash, steam until you can push through a piece with a spatula
  4. Mix the squash, sour cream, onion saute, soup, 1 cup of cheese, sherry (not too much!) and 1/4 cup of breadcrumbs or stuffing. i use a potato masher to get a nice, chunky texture.
  5. Place in a casserole dish, top with remaining cheese, then top with enough breadcrumbs or stuffing to cover.
  6. Bake at 350 F for at least 30 minutes. its ok to go over...i like to practically burn the cheese.
  7. Enjoy! i really like to put hot sauce on mine, but its not for everyone so i wait until its on my plate to add.
