This is my favorite squash casserole. I decided to really work on this one while I was in college, so I cooked it over and over and over...my roommates did not mind at all! Since then, it has been very popular with my friends and family, and is constantly requested for pot luck. Read more . If you like southern comfort food, this is THE recipe! If you are watching calories, don't bother.
Ingredients:
1 small sweet onion, vidalia if available, chopped
4 green onions (scallions), chopped
2 cloves garlic, minced
2 tbsp butter or margarine (butter!)
2 tbsp olive oil
1 tbsp sugar
salt and pepper to taste
1 1 lb bag frozen yellow squash (fresh if you prefer, but it adds prep time)
8 oz sour cream
1 can cream of chicken with homestyle herbs soup
2 cups shredded cheese blend - a cheddar blend works nicely
1/2 tsp sherry
breadcrumbs or herbed stuffing
Directions:
1. MOST IMPORTANT STEP: saute the first 3 ingredients in the butter and olive oil. when the sweet onion has become translucent, add the sugar and continue to saute until it caramelizes. if it doesn't caramelize, you haven't cooked it long enough and it will not taste nearly as good.
2. (frozen squash) lightly salt the squash and microwave on high for 5 minutes - for average strength microwave. adjust accordingly. drain, microwave 5 more minutes.
3. (fresh squash) wash and slice the squash, steam until you can push through a piece with a spatula
4. mix the squash, sour cream, onion saute, soup, 1 cup of cheese, sherry (not too much!) and 1/4 cup of breadcrumbs or stuffing. i use a potato masher to get a nice, chunky texture.
5. place in a casserole dish, top with remaining cheese, then top with enough breadcrumbs or stuffing to cover.
6. bake at 350 F for at least 30 minutes. its ok to go over...i like to practically burn the cheese.
7. enjoy! i really like to put hot sauce on mine, but its not for everyone so i wait until its on my plate to add.
