Fettuccine With Prawns, Mango and Snow Peas

Ingredients:

Directions:

  1. Blanch the snowpeas in boiling, salted water for one minute- then refresh under cold water.
  2. Drain and set aside.
  3. Cook the fettuccine in a large pan of boiling salted water acccording to the packet instructions.
  4. Drain.
  5. Heat oil in a large frying pan over medium high heat.
  6. Add garlic and prawns and cook for 2-3 minutes until the prawns have turned pink.
  7. Remove prawns and set aside.
  8. Return pan to the heat and add herbs, cream and snow peas.
  9. Cook for a further 1-2 minutes.
  10. Toss pasta with the cream sauce, mango slices and cooked prawns.
