Espresso Ice Cream Pie

Ingredients:

Directions:

  1. Blend expresso beans in blender until finely chopped
  2. Add ice cream and blend until smooth
  3. Spoon mixture into pie crust
  4. Cover and freeze about 2 hours
  5. Drizzle with caramel sauce
  6. Variation: Before putting on caramel sauce, I sometimes top with whipped topping then drizzle the caramel
