Elaines Heart-healthy Tomato-pepper Appetizer

Ingredients:

Directions:

  1. Cut the top off both tomatoes
  2. Reserve tops!
  3. Scoop out tomatoes, reserving contents
  4. Shred the lettuce with a plastic knife. (metal or steel rusts the lettuce)
  5. In a mini-processor, finely chop the peppers individually, placing each color into separate dishes
  6. Finely process the shallots, placing into a separate dish
  7. Place tomato contents you scooped out, chives, ginger, and carrot into the mini-processor and liquefy
  8. Plating:
  9. On small salad plates, lay a bed of half the lettuce on each plate
  10. Fill tomatoes with layers of the peppers and shallots
  11. Place tomatoes on the lettuce bases
  12. Add 1 tbsp each of the Italian salad dressing, and replace the tomato tops
  13. Place some peppers around the lettuce bases
  14. Add 4 generous dollops of the liquefied tomato blend around the tomatoes
  15. Refrigerate until serving
