Ingredients:

Directions:

  1. Be sure the cooked spinach is thoroughly drained [squeeze dry and place between sheets of paper towels. Drain again after chopping.
  2. Add salt and pepper to taste and freshly ground nutmeg.
  3. Add 1/3 c heavy cream to the spinach and mix well.
  4. Divide the spinach among 4 individual buttered baking dishes.
  5. Break 2 eggs into each dish and spread with some of the remaining cream.
  6. Sprinkle each dish lightly with grated cheese.
  7. Bake in a moderate oven, 375 degrees, for about 10 minutes, or until the eggs are set to taste.
  8. Note: you can skip the heavy cream, you can substitute canned spinach for fresh or frozen.
