Easy Masoor Daal (Red Lentils)

Ingredients:

  • 1 cup red lentil
  • 1 inch gingerroot, peeled
  • 1 tsp salt
  • 1/2 tsp cayenne pepper (to taste)
  • 1 tsp cumin seed

Directions:

  1. Rinse lentils thoroughly and place in a medium saucepan along with ginger, turmeric, salt and cayenne pepper.
  2. Cover with about 1 inch of water and bring to a boil.
  3. Skim off any foam that forms on top of the lentils.
  4. Add diced tomatoes.
  5. Reduce heat and simmer, stirring occasionally, until beans are tender and soupy.
  6. Meanwhile, in a small frying pan, combine oil, onion and cumin seeds.
  7. Fry on high/medium heat to brown, but do not burn onions.
  8. Stir into lentil mixture.
