Easy Mango Pudding

Ingredients:

Directions:

  1. Coarsely chop 2 mangoes.
  2. Dice the remaining mango.
  3. Combine coarsely chopped mangoes and 1/4 cup water in blender.
  4. Process until smooth.
  5. Press puree through fine sieve over bowl.
  6. Discard solids.
  7. Bring 3/4 cup water to boil in medium saucepan.
  8. Add sugar to pan, stirring until dissolved.
  9. Remove from heat.
  10. Stir in remaining 1 1/4 cups water.
  11. Sprinkle unflavored gelatin over water in saucepan.
  12. Let stand 1 minute.
  13. Add mango puree, stirring with whisk.
  14. Pour mixture evenly into 8 ramekins.
  15. Cover and chill overnight or until set.
  16. Top evenly with diced mango.
  17. Place whipping cream in medium bowl and beat with mixer at high speed until stiff peaks form.
  18. Serve with pudding.
