Drunken Divinity Candy

Ingredients:

  • 1/2- cup walnut pieces
  • 1/8- tsp salt
  • 1/2 - cup water
  • 2- tbsp dark rum
  • 1/2- cup golden raisins

Directions:

  1. Butter a baking sheet and set aside.
  2. Heat a saute pan on medium heat, add walnut pieces and sautee about three minutes to toast.
  3. Do not let them burn.
  4. Remove walnut pieces from pan and set aside.
  5. Pour sugar, corn syrup, salt and water in heavy saucepan.
  6. Cook over low heat, stirring frequently, until mixture reaches hard ball stage, 260 degrees
  7. As mixture is cooking, place egg whites in a cool, medium bowl and beat until they form stiff peaks.
  8. Pour the cooked syrup mixture slowly into egg whites, beating constantly.
  9. Add rum, raisins and walnut pieces.
  10. Beat until mixture holds its shape
  11. Using a buttered teaspoon, drop individual pieces of candy onto baking sheet.
  12. Number of Servings: 40-50

  14. Notes from the Cook: You can use waxed paper rather than a prepared baking sheet, if you choose. I often test my candy's doneness by dropping a small bit on a piece of wax paper to see if it holds its shape.
