Ingredients:

  • 1 1/3 cups flour
  • 1 cup quick oats
  • 1/2 cup firmly packed light brown sugar
  • 1 tbsp. baking powder
  • 1 tsp. cinnamon
  • 1/2 tsp. salt
  • 2/3 cup milk
  • 1/3 cup apple juice
  • 1/4 cup vegetable oil
  • 1/4 cup finely chopped walnuts
  • 3/4 cup peeled chopped apple (about 1 medium)

Directions:

  1. Heat oven to 400*. Line 12 medium muffin cups with paper baking cups. In a large bowl, combine dry ingredients. Add remaining ingredients except nuts and apple, mixing just until moistened. Gently fold in nuts and apples. Fill paper liners 2/3 full. Bake 20-22 minutes or until golden brown.
