Dixie Kitchen And Bait Shop Peach Cobbler

Ingredients:

  • filling
  • 1 1/2 cups granulated sugar
  • 1/4 cup packed brown sugar
  • 1/2 rounded tsp cinnamon1/2 tsp nutmeg
  • 3/4 cup peach juice
  • 1/4 cup butter cut into small pieces
  • crust
  • 1 tsp salt
  • 2/3 cups shortening
  • 1/4 cup butter, cut into small pieces
  • 1/3 to 1/2 cup ice water

Directions:

  1. To prepare oven, baking pan:
  2. Heat oven to 375 degrees. Lightly coat a 9x13 inch pan with cooking spray.
  3. To make filling:
  4. Arrange peaches in even layer in prepared baking pan. Set aside. In a large
  5. Bowl, whisk together granulated sugar, brown sugar, flour, cinnamon, and nutmeg.
  6. Whisk in peach juice until smooth. Pour over peaches. Sprinkle butter over top. Set aside.
  7. To make crust:
  8. In a medium bowl,whisk together flour and salt. Add shortening and butter. Using a pastry
  9. Blender or gloved hands, {Fur lined mitts will not work for this}work butter and shortening into
  10. Dry ingredients until mixture forms pea sized lumps. Slowly add water, adding only enough to hold the dough together.
  11. (Do not over mix). Place dough between two sheets of parchment paper. Roll dough into a rectangle slightly larger than baking pan,
  12. And about 1/4 inch thick. Remove top sheet of parchment paper. Cut dough into strips and weave into crust over cobbler.
  13. Trim crust to fit inside pan.
  14. To bake: Bake for 50 minutes to 1 hour or until crust is golden brown. Let stand 10 minutes before serving.
