Diabetic Chocolate Chip Pumpkin Bars

Ingredients:

  • 1 cup flour
  • 3/4 cup sugar
  • 1/2 cup finely chopped pecans or walnuts
  • 2 teasp. baking powder
  • 1 teasp. cinnamon
  • 1/2 teasp. baking soda
  • 1/2 teasp. salt
  • 1 (15-oz) can pumpkin
  • 4 eggs slightly beaten or (1 cup frozen egg product, thawed)
  • 1/2 cup canola oil
  • 1/4 cup fat-free milk
  • 1/2 cup miniature semi-sweet chocolate chips

Directions:

  1. Preheat oven to 350' F
  2. Lightly coat 15 x 10 x 1 inch baking pan with cooking spray
  3. In large bowl combine flour, ww flour, sugar, pecans, baking powder, cinnamon, baking soda, and salt
  4. In medium bowl combine pumpkin, eggs, oil and milk.
  5. Add pumpkin mixture and 1/3 cup of the chocolate chips to flour mixture.
  6. Stir until just combined
  7. Spread evenly in baking pan
  8. Sprinkle the remaining chocolate chips over the top
  9. Bake about 25 minutes or until a toothpick comes out clean
  10. Cool on a wire rack
  11. Cut into bars
