Dad's Favorite Chocolate Mint Cookies

Ingredients:

  • 1.5 tsp baking powder
  • confectioner's sugar
  • 2 eggs
  • 1.5 cup flour
  • 1/4 tsp salt
  • 1 cup sugar
  • 1.5 tsp vanilla

Directions:

  1. Combine flour, baking powder, and salt.
  2. Cream butter and sugar. Add 1 cup of melted chocolate chips and vanilla. Beat in eggs. Stir in flour mixture and reserved chips.
  3. Wrap dough in plastic wrap and chill.
  4. Form into 1" balls, roll in sugar, and place on ungreased cookie sheets.
  5. Bake at 350 degrees for 10-12 min. Let cool on sheets 5 min then move to cooling racks.
