Crockpot Apple-raisin Bread Pudding

Ingredients:

  • 3 eggs
  • 1 tsp rum extract
  • 1/2 tsp salt
  • 2 cups milk
  • 1/2 cup raisins
  • 1 cup slivered almonds
  • 1 cup apple pie filling (1/2 can)
  • 1 package. whipped topping mix (dry)
  • 1/2 tsp cinnamon
  • 1/2 tsp rum extract
  • 1/2 cup cream soda
  • 1/4 tsp salt

Directions:

  1. Blend oatmeal to a powder in a blender.
  2. Beat eggs, add extract, sugar, milk, cream and salt.
  3. Gently add bread, raisins, almonds, pie filling and oatmeal. Mix just until bread soaks up some sauce.
  4. Put in fridge to set for one hour.
  5. Spray slow cooker, then add bread mixture.
  6. Set cooker to high, no longer than two hours or you'll have mush. Test it with a knife like a cake - should come out clean.
  7. Mix up all ingredients to make sauce. Stir until it thickens a little.
  8. Pour over individual servings of pudding.
