Creamy Cornbread Casserole

Ingredients:

  • 1 (8 1/2 oz) box cornbread mix
  • 1 cup sour cream
  • 1 (8 oz) can creamed corn
  • 1 (8 oz) can corn niblets
  • 1 egg
  • 2 tbsp butter

Directions:

  1. Pre heat oven to 375.
  2. Combine all ingrediants and pour into an oven safe casserole.
  3. Bake at 375 for about 45 minutes or until golden brown on top.
  4. I also do a southwest variation and add mexicorn instead of plain corn niblets. I also add some chili power and 1/2 cup of cheddar cheese. Yum.
