  1. Melt the butter in a stock pot. Add carrots, celery, garlic powder, and Italian seasoning. Cook until carrots and celery are soft. Add the stock and the Simply Potatoes and onions. Bring to a boil and lower the heat to medium. Cover and cook for 10 minutes or until the potatoes are fork tender. Add the tomatoes and cook covered for another 5 minutes stirring occasionally. Add the flour to the milk and whisk together until all of the lumps are gone and then slowly add it to the pot stirring constantly as you do it. Add the broccoli and cook for another 5 minutes uncovered. Remove the pot from the stove and stir in the Swiss cheese just until melted. Serve hot. You may also re-heat this soup but you may have to add a little milk to it because it will thicken in the refrigerator.
