Cranberry-walnut Oatmeal

Ingredients:

  • 1 cup steel-cut oats (these oats make a creamy and delicious oatmeal)
  • 1/3 cup sweetened dried cranberrties
  • 1/4 tsp. salt
  • 1/4 tsp cinnamon
  • 2 cups water
  • 4 tsp chopped walnuts ( i toast mine to bring out their flavor)
  • 4 tsp firmly packed brown sugar

Directions:

  1. In a saucepan combine oats, cranberries, salt ,cinnamon and water.
  2. Bring to a boil over high heat, reduce the heat to low and simmer, uncovered until the oats are tender , about 20 min.
  3. Spoon the oatmeal into bowls and sprinkle each with walnuts and brown sugar.
  4. Serve right away!
