Cranberry Sauce

Ingredients:

  • 1 3/4 cups granulated sugar (350 g)
  • 1 orange , juice squeezed into a 1 cup measure
  • 2/3 cup water, enough to make-up a total of 1 cup liquid with the ora juice (more or less)
  • 1 pinch salt

Directions:

  1. Combine all ingredients in a medium sauce pan, bring to a boil while stirring occasionally.
  2. Reduce heat and simmer for 10 minutes while continuing to stir occasionally.
  3. Cool to room temp in a bowl or strain through a fine mesh strainer, pressing all of the juice out of the berries and into the bowl.
  4. The very high amount of pectin contained in the fruit will jell this nicely, but it's important to get all the juice out of the berries if you go that route.
