Cornmeal Pancakes With Dried Pineapple

Ingredients:

Directions:

  1. In medium bowl combine cornmeal, flour, sugar, baking powder and salt.
  2. Mix well then set aside.
  3. Whisk together milk, eggs and butter.
  4. Add to dry ingredients mixing just until dry ingredients are moistened.
  5. Stir in dried fruit then allow to stand 5 minutes.
  6. Heat lightly greased griddle or skillet over medium heat until hot.
  7. For each pancake pour scant 1/4 cup batter onto hot griddle.
  8. Turn pancakes when tops are covered with bubbles and edges look cooked.
  9. Cook second sides until golden brown then serve warm with maple syrup.
