Ingredients:

  1. Clean, wash and finely chop fresh coriander leaves. Reserve two tbsps for garnish. Remove stems, wash and finely chop green chillies.
  2. Combine chopped leaves, green chillies, jaggery, salt, soda bicarbonate, turmeric powder, flour and 2 tbsps of oil. Add enough water to make a thick batter. Ensure that the consistency is not thin.
  3. Pour the batter onto a greased plate that is atleast one and half inches deep or a tray measuring approx six by six by one and half inches.
  4. Steam on high heat for 15 to 20 minutes or till firm and cooked. Cheack by inserting a skewer into the wadi and if it comes out clean, then it is cooked. Remove, cool and cut into 1 sized cubes.
  5. Heat sufficient oil in a pan and deep fry the wadis till they are light golden brown in color and crisp. Drain and keep on an absorbent kitchen towel.
  6. Serve hot, garnished liberally with chopped coriander leaves.
