  1. Bring a pot of water to a boil, throw in the shrimp and immediately remove it from the heat. The shrimp will cook in the hot water all the way to the center without ever toughening the outer edges. This takes a little longer, but not much.
  2. Jumbo peeled shrimp usually cook through in 10 minutes or less.
  3. Peeled large shrimp (26 to 30 a pound) will cook through in 6 to 8 minutes when resting in hot water. Add or decrease 1 or 2 minutes if the shrimp are larger or smaller, and add an additional minute if cooked in their shells.
  4. Shrimp do just fine in salted water, but other ingredients can be added to the water for extra flavor. These include white wine, onion slices, whole peppercorns, bay leaves and parsley sprigs.
  5. Once the shrimp are cooked, plunge them into ice water to stop further cooking. Don't run water over shrimp, as this will rinse away flavor.
