Ingredients:

  • 4 lemons at room temp. (roll on counter to soften)
  • 11/2 cup. sugar
  • 1/8 tsp. salt

Directions:

  1. Remove zest from lemons
  2. Juice lemons to equal 1/2c. and set aside
  3. Put zest in a food processor and add sugar, process 2 min.
  4. Cream butter, sugar, and lemon zest in a mixing bowl
  5. Add eggs one at a time
  6. Add lemon juice and salt
  7. Mix till combined
  8. Pour mixture in a sauce pan
  9. Cook over low heat stirring constantly until thickened
