Coconut Stuffed Sweet Potatoes

Ingredients:

Directions:

  1. Scrub potatoes thoroughly and rub skins with oil then bake at 375 for 1 hour.
  2. Let cool to touch then slice skin away from top of each potato.
  3. Carefully scoop out pulp leaving shells intact.
  4. Combine pulp, sugar, milk, orange juice and salt then beat with electric mixer until smooth.
  5. Stir in rind and 1/2 cup coconut then spoon into shells and sprinkle with remaining coconut.
  6. Bake at 350 for 20 minutes.
