Coconut Chocolate Chunk Cookies

Ingredients:

Directions:

  1. In a medium bowl, mix together both flours, cinnamon and baking soda; set aside.
  2. Preheat oven to 375F and lighly grease cookie sheets.
  3. In a large bowl cream margarine and both sugars. Add egg white and vanilla, then beat till light yellow in color (don't over beat, no peeks needed here!).
  4. Add dry mix to wet mix gradually until completely blended. Fold in chocolate chunks then drop by heaping teaspoonful onto cookie sheets.
  5. Bake 6-8 min's (my oven took 6). Let cool on sheet one minute then move to cooling rack.
  6. Enjoy!
