Ingredients:

  1. Turn on grill in oven.
  2. Beat the eggs with the water until fluffy.
  3. Add a couple of twists of black pepper and the grated cheese and beat lightly.
  4. In a small sauce pan heat one knob of butter until it foams, but doesn't burn. Add the tomatoes and fry for about 5 minutes , until they turn soft. Keep warm on very low heat and add the basil.
  5. In a small non-stick frying pan heat the other knob of butter and when it's foamy add the egg mixture. Reduce the heat to as low as possible and and cook until eggs have set and the top is runny (5-8 minutes).
  6. Spoon the tomato mixture onto the eggs mixture and pop the frying pan under the grill for about 30 seconds, until the top of the omelette has set but not turned brown.
  7. Loosen with a spatula and slide onto a small warmed plate, flipping half over, omelette style.
  8. Serve with crusty bread, or with bread and a salad for brunch.
