Ingredients:

  • 1 cup butter
  • 2/3 cup confectioners' sugar
  • 2 cups flour

Directions:

  1. Preheat oven to 350 degrees.
  2. Cream butter.
  3. Mix in sugar, almond extract and flour.
  4. Press in pan. (I like to use a stone pie plate).
  5. Take a fork and poke lots and lots of holes in the shortbread all over. This step is essential to the shortbread.
  6. Bake at 350 for 1 hour.
  7. When cooled turn out onto wax paper and cut. I cut it like pie slices.
  8. Enjoy with a cup of Earl Grey hot tea or your favorite.
