Ingredients:

  • 1 cup flour
  • 1 1/2 cups sugar, granulated
  • 1/4 tsp salt, table
  • 1/4 cup butter
  • 1 egg
  • 1/2 cup milk, non fat
  • 2 cups blueberries
  • 1 cup water
  • 1 tsp cinnamon

Directions:

  1. Spray a 9 square pan with Pam. Preheat the oven to 350 f
  2. Divide the sugar and put 1 cup into a bowl, reserving 1/2 cup and 2 tablespoons
  3. Combine the flour, salt and baking powder
  4. Cream the butter and the 1 cup of sugar (less 2 tablespoons) together.
  5. Stir in the egg
  6. Stir together the dry ingredients, the egg mixture and the milk
  7. Pour the batter into the pan and top with the blueberries mixed with the reserved 1/2 cup of sugar
  8. Bring the water to a boil and pour carefully over the berries and batter. The berries will sink through the batter.
  9. Sprinkle with the two tablespoons of sugar and the cinnamon
  10. Bake for 45 minutes or until the top is golden brown.
