Citrus Chicken Stuffed Acorn Squash

Ingredients:

  • 2 medium squash , winter , acorn
  • 1/2 cup water
  • 2 medium onions
  • 1/2 tsp salt
  • 1/2 tsp pepper
  • 1/2 tsp thyme leaves
  • 1 tbsp orange peel

Directions:

  1. Cut acorn squash in half, scoop out seeds
  2. Place cut side down in 1/4 water
  3. Bake at 375 for 45 minutes
  4. Stir fry all remaining ingredients
  5. Stir in orange peel
