Ingredients:

Directions:

  1. Mix cinnamon, brown sugar and currants in a small bowl, set aside.
  2. Beat together oil, sugar, eggs and orange juice
  3. Sift together flour, baking powder and salt.*
  4. Add to oil mixture, mix until flour is absorbed.
  5. Divide dough into 2 balls. Chill for about 1 hour.
  6. Roll each ball into a rectangle about 1/4'' thick.
  7. Spread evenly with brown sugar and cinnamon mixture.
  8. Roll tightly. Cut into 1/2'' slices. Place on lined or greased baking sheet.
  9. Bake at 350F for 15-20 mins.
  10. *If you use the smaller amount of flour the dough will be a bit sticky but it will make these cookies more biscuit like.
