Ingredients:

Directions:

  1. Preheat oven to 325°F Line 2 large baking sheets with parchment paper.
  2. Mix flour, 1 1/2 teaspoons cinnamon, baking powder and salt in medium bowl to blend.
  3. Using electric mixer, beat 1 cup sugar and butter in large bowl until fluffy.
  4. Add 1 egg; beat well.
  5. Add egg yolk; beat well.
  6. Mix in vanilla, then dry ingredients.
  7. Transfer dough to work surface.
  8. Divide in half.
  9. Shape each half into 9-inch-long, 1 1/2-inch-wide log.
  10. Transfer logs to baking sheets.
  11. Beat remaining egg in small bowl.
  12. Brush logs with egg.
  13. Bake until golden and firm to touch (dough will spread), about 50 minutes.
  14. Cool on baking sheets.
  15. Maintain oven temperature.
  16. Mix 3 tablespoons sugar and 1 teaspoon cinnamon in small bowl to blend.
  17. Using serrated knife, cut logs into 1/2-inch-wide diagonal slices.
  18. Place biscotti, cut side down, on baking sheets.
  19. Sprinkle 1/4 teaspoon cinnamon sugar over each biscotti.
  20. Bake until pale golden, about 20 minutes.
  21. Cool on racks.
  22. (Can be made 1 week ahead. Store in airtight container.).
