Cinnamon Raisin Stuffed Apple Rings

Ingredients:

  • 1/3 cup raisins
  • 2 tbsp of softened butter
  • 1 tbsp of packed brown sugar
  • 1/2 tsp sugar
  • 1/2 tsp vanilla
  • 2 medium apples ( gala or jonathon preferred)
  • cooking spray

Directions:

  1. Combine raisins, pecans, butter, brown sugar, vanilla and cinnamon in a bowl and stir until mixture is combined.
  2. Slice the ends of the apples.
  3. Core the center of the apples.
  4. Cut each apple into 4 equal slices.
  5. Line the bottom of the baking sheet with foil and coat it with cooking spray or use parchment paper and omit the cooking spray.
  6. Place the apple rings on the baking sheet.
  7. Top each apple with equal amounts of the raisin mixture.
  8. Press mixture down gently.
  9. Bake in oven at 425 degrees for 10 minutes or until just soft.
  10. Serve warm.
  11. Enjoy!
