Ingredients:

  • 2 eggs
  • 1 cup milk
  • 1 cup flour
  • 1/2 tsp. salt
  • 1/2 tsp. ground cinnamon
  • apple spread , recipe follows

Directions:

  1. Heat oven to 450. Generously grease 6 cup popover pan, six 6 oz. custard cups or 8 medium muffin cups, 2 1/2 x 1 1/4 inches. Beat eggs and milk slightly in medium bowl. Stir in flour, salt and cinnamon with fork or wire whisk just until smooth. Do not over beat.. Fill popover or custard cups one half full, muffin cups three fourths full. Bake 25 minutes. Reduce oven temperature to 350. Bake 15 to 20 minutes more or until deep golden brown. Immediately remove form pan. Serve hot with apple spread. Makes 6 to 8 popovers.

  3. 1/4 cup margarine or butter, softened (1/2 stick)
  4. 2 T. apple butter or applesauce
  5. Beat ingredients in small bowl on high speed until blended
