Chocolate Pistachio Madeleines

Ingredients:

  • 1/3 cup (about 1 1/2 oz) shelled natural pistachios
  • 1/4 lb (1 stick) unsalted butter
  • 1 tblsn unsalted butter. this is to grease the molds
  • 1/2 tsp salt
  • 2/3 cup sugar
  • 3 large eggs
  • 1 tsp vanilla
  • 3 oz semi-sweet baking chocolate - coursely chopped

Directions:

  1. Pre-heat the oven to 375 degrees
  2. With the 1 tblsn butter, grease the molds in the Madeleine pans, making sure that the indents are well greased.
  3. Using 1/4 cup of the flour, flour the molds & tap out any excess
  4. Sift the remaining 3/4 cup of flour with the salt
  5. Chop the nuts finely with a knife or pulse in a food processor
  6. Remove 1 tblsn for garnish & set aside
  7. Place the 1/4 cup of butter in a glass bowl in the microwave on med. power for about 50 secs. Stir with a rubber spatula until melted & creamy. set aside
  8. Place the sugar , eggs & vanilla in the small bowl of an electric mixer & beat on Med/high for about 3 mins until light & thickened
  9. On low speed, gradually add the flour mixture. When it is well combined, scrape down the sides of the bowl.
  10. On low speed, slowly add the melted butter & mix till combined
  11. Add the chopped pistachios & the chocolate chips & mix on low till combined
  12. Remove the bowl from the mixer & finish mixing with the rubber spatula.
  13. Place about 2 level tblspns of batter in each Madeleine mold. The batter will spread in the oven
  14. Place the pans on the center rack of the oven & bake for about 15 -16 mins or till a toothpick inserted in the middle comes out clean
  15. Immediately invert the pans & tap out the Madeleines, they should drop out easily, & place them on wire racks to cool completely
  16. In a double boiler or the microwave, melt the baking chocolate & stir till smooth
  17. Dip the rounded end of each madeleine in this chocolate & place them on a baking sheet
  18. Sprinkle the chocolate on each one with the reserved 1 tblspn of nuts & place in the fridge for a few mins to set the chocolate
