Chocolate Pistachio Hazelnut Biscotti

Ingredients:

  • 1/3 cup cocoa powder
  • 1 1/2 cups granulated sugar
  • pinch of salt
  • 1 tsp vanilla
  • 1/2 cup pistachio flour, finely grounded
  • you can make your own by putting them in your food processor

Directions:

  1. Mix all dry ingredients with Kitchen Aid paddle.
  2. Slowly add liquid ingredients until dough is formed.
  3. Roll into 10-inch logs
  4. . Line onto greased baking pan.
  5. Bake in preheated 325 degree oven for approximately 25 minutes, until slightly golden brown
  6. . When cooled, slice 1/2 inch thick and bake again, until crisp.
  7. Dip each half into hot, melted, white chocolate before serving.
  8. Yield: 4 1/2 12-ounce logs
