Chocolate Mint Brownies

Ingredients:

  • 1 (22 1/2 oz) box reduced-fat brownie mix
  • 3/4 tsp peppermint extract, divided
  • 2 cups confectioners' sugar
  • 5 -6 drops green food coloring
  • 1 tbsp cocoa
  • 1 tbsp water

Directions:

  1. Preheat the oven to 350 degrees.coat a 13 by 9 by 2 inch baking pan with nonstick cooking spray.
  2. Prepare the brownie mix according to package directions,adding 1/4 teaspoon of the peppermint extract. pour the batter into the prepared pan.
  3. Bake the mix according to the package directions. do not overbake.
  4. Remove from the oven & cool completly to room temperature.
  5. In a mixing bowl,beat together the cream cheese, 1 tablespoon margarine, the confectioners' sugar & 1/2 teaspoon peppermint extract until smooth. add the food coloring whil mixing.spread on the baked brownie layer.
  6. In a small bowlo, mix together the remaining 2 tablespoons margarine, cocoa & water.
  7. Spread the mixture carefully over the cream cheese layer & cool. cut into squares.
